Milk Protein Interactions: Effects on Product Properties
The functional properties of milk products are inextricably linked to the interactions – naturally present, process-induced, or spontaneous – of the proteins within the system. This talk will present examples of the various types of interactions, how they are affected by small changes to the milk environment, and their impact on the functional properties of the milk.
